Cows feet the Haitian way

Cows feet the Haitian way

Wash the meat with salt and vinegar
Place cows feet in a boiling water with 1/2 and orange
Also add 1 cinnamon stick and garlic
Do not add any seasoning until it's almost cooked.
It takes at least 1-2 hours to cook.
When you add salt, it will make the cooking process even longer.
~Avoid salt and lemon juice

When the cows feet becomes translucent and seems like the meat is falling off the bone, drained the excess water. In a clean pot, add some olive oil, then fry the cows feet with tomato paste. Add seasoning and some habanero pepper to taste. Add salt and a tablespoon of lime juice. Add salt and pepper to taste!
Super yummy and a great way to boost your energy, especially for breast feeding moms.

How to make Fried Chicken Wings the Haitian Way

Who does not love Chicken Wings? that's one reason I would never be a vegetarian. I love Chicken wings very much... this recipe that I am about to share with you, was given to me from a young guy who used to cook for my mom's cousin. He really knew how to cook!!!

I am not a big fan of the flour on chicken wings, but with this recipe the crust is so crispy that it blends with the chicken. I don't like Kentucky Fried Chicken because sometimes it's not cooked all the way ewwwww.... I hate that!!! I love my chicken to be well cooked and crispy.

My mom bought me some fresh chicken wings, so I thought I would make a video on how to prepare it.

First thing, you will need to wash those chicken wings, wash them well, at least 3 times with 1 cup of sour orange or vinegar.

Pour 1 cup of 1% low fat or any type of milk in your fridge
1 cup of evaporated milk, I like to use Carnation!
1/2 cup of Vinegar
Some Salt and pepper to taste
I like to add some cayenne pepper to give it a nice kick :-)
I also like to add some all purpose seasoning "Optional"
Let the meat marinate in this nice seasoning bath over night.
Next day, just heat up your pan with some vegetable or corn oil, then dredge your chicken wings in some flavored flour, and put that in the pan. Add some butter in that oil, it will make the crust super delicious!
***The way I flavor my flour is very easy! I just add some some salt, old bay (That's it!)
After you fry your chicken wings 10 min on each side, place them in the oven for another 10 to 15 minutes. Like I told you guys before, I like my meat well cooked! My husband likes to eat them before I put them in the oven. Also, by putting the wings in the oven, the heat extracts and drains most of the oil (Healthier).
Your chicken will be ready to serve!

How to make cornmeal with Spinach The Haitian way!

How to make Mais moulu The Haitian way

Mais moulu or corn meal is one of the dishes that many Haitian love to consume. There are different ways of preparing this dish. You can eat it plain or with beans. Some people like it with black or red beans. As long as it has some good coconut milk, I don't have any preference. My mom usually add some black mushroom when she is preparing it with black beans. Hmmmmm.... absolutely delicious. Well in this video, this is my favorite way of eating corn meal in the morning. It gives you strength throughout the day.

When making corn meal with spinach, I also like to add some sour herring to give it an appetizing taste. I have heard from all your concerns, so I spent some time putting this together.

Thanks for watching! This is my most favorite way of eating corn meal "Mais Moulu". Back in Haiti, I used to love eating this meal for breakfast before going to school. In America, we eat a light breakfast, which is contrary to Haiti where we eat a heavy meal in the morning. I really like the sour herring taste in this dish.

To make this dish, you will need:
Cornmeal
Sour herring
Salt, pepper, parsley, thyme
Coconut milk
Spinach
Maggie (which I don't recommend due to MSG)
