How to make Pain Patate The Haitian Way

List of Ingredients

2 lbs white sweet potatoes1 large banana, peeled and cut in one-inch pieces1 cup brown sugar1/2 cup seedless raisin1 teaspoon grated 1/4 teaspoon salt12 ounces evaporated milk1 teaspoon vanilla extract1/2 teaspoon grated nutmeg1 teaspoon ground cinnamonrind of one lemon, grated1 1/2 cups coconut milk3 tablespoons butter.

      Preheat oven to 375 degrees.

      Grate sweet potatoes into mixing bowl and mash the banana into the sweet potatoes.

      Mix in all ingredients, one at a time, until each ingredient is fully blended into the mix.

      Spread evenly into a 9x13 inch baking pan.

      Bake for 90 minutes or until toothpick inserted into center comes out clean.

      Let cool 10 minutes. Serve hot. For an added treat, top with whipped cream or rum syrup
