How to Organize your Christmas Baking


1. How to Plan your Christmas Baking
Use our checklist to organise your Christmas baking:
Baking Checklist
Estimate number of baked items needed for the holidays. Include gifts, parties, afternoon teas, get togethers and include extra for unexpected guests.
Decide on recipes and search for old favorites and perhaps some new ones.
Make a list of all ingredients needed. Check supplies, including staples such as butter, flour, sugar etc and make a list of ingredients needed to be purchased.
Check expiry dates on nuts and spices in your pantry. If out of date, discard and buy new ones.
Bake ahead and freeze where appropriate. Brownies and bar cookies are ideal.
Set aside a day for baking. Not everything can be made in advance, so pour yourself a glass and put on the carols. Pretty soon this may become part of your family’s Christmas traditions.
Wrap goodies for gift giving and store.
2. Pumpkin Chocolate Chip Cookies
Ingredients
1 cup canned pumpkin
1 cup white sugar
½ cup apple sauce
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups chocolate chips
½ cup chopped walnuts
Method
Preheat the oven to 180oC / 350oF and line two cookie sheets with baking paper.
Combine the pumpkin, sugar, apple sauce and egg.
Sift together the flour, baking powder, ground cinnamon and salt.
Dissolve the baking soda into the milk then add to the flour mixture.
Add to the pumpkin mixture and mix together. Add the vanilla, chocolate chips and nuts and combine.
Drop Spoonfuls of the mixture onto the cookie trays and bake for approximately 10 minutes or until lightly browned and firm to the touch.
3. Chocolate Almond Rum Balls
Ingredients
550g / 19 oz chocolate cake, crumbled
1 ¼ cups almond meal, almond flour or ground almonds
½ cup dark rum
½ cup sweetened condensed milk
Packet chocolate sprinkles
Method
In a bowl, combine the cake crumbs, almond meal, rum and condensed milk. Mix well to combine.
Roll heaped teaspoons of the mixture into balls then roll in the chocolate sprinkles.
Place the balls into mini baking cases and chill in the refrigerator until firm.
